I found this fabulous recipe book on sale when we were shopping for Christmas gifts and I’m quite satisfied with the million menus each with beautiful photos inside. It also has a section for desserts, may not be much but really good ones. The first time I peeked through, I already had my eye on this banana muffin recipe.
The first time I tried this recipe I must have mixed more banana than necessary. The taste was right but the texture isn’t. The 2nd time around, it’s perfect. They all made it through my box of Christmas goodies.

I only have this week and I’m off for Christmas holiday! Yey! (1 1/2 day next week doesn’t count at all.) I decided I’m gonna be spending those days practicing a couple of cupcake and muffin recipes for giveaways. Nothing dead tedious, just pretty basic but definitely something to be proud of. Probably work on some new frosting to jazz up my vanilla cupcakes and chocolate muffins.
These are mini triple choc muffins I baked for Antonio’s packed school lunch.

I hosted a simple dinner with new friends about a month ago and roasted 3 whole chickens. Potluck kami… so I ended up with massive left-overs. Don’t wanna be eating the same dish for days so I thought about paksiw na lechong manok. Perfect! Problem is… I don’t have Mang Tomas lechon sauce. Having no time to buy, I googled “how to make lechon sauce” and ended up reading Marketman’s recipe. Lechon sauce from scratch – fabulous!
I first tried his recipe; replacing cider vinegar with standard mukhasim vinegar and Reno liver spread with a packet of liver pate. Instant sawsawan for fried pork chops. Nice, YUM and chunky. Ubos agad. And so the next day, I decided to use the same recipe but go straight to paksiw na lechong manok.
