I was invited to Mayumi’s 1st birthday party and decided to bring oven-roasted baby potatoes. I know. It seems to too adult for toddlers but hey, these baby parties are normally swarmed with parents accompanying their kids, right?
For moms planning a party on a certain budget (and doing all the cooking!), it is quite important to be practical. As the saying goes… maximum effect, minimum effort. Once the mains are decided, a little creativity on the side dishes or ‘extenders’ helps. Think inexpensive, yummy, healthy, quick and easy to prepare.
Roasted potatoes. You can even roast them in a separate rack together with a whole chicken as I did few nights ago on my own birthday dinner. Besides, kids always seem to love anything crisp they would surely love these miniature potatoes. I personally think the crispy, thin skin is the best part!
Baby potatoes, pricked with a fork (bigger ones cut in halves)
Italian herbs (oregano, basil and parsley)
Preheat oven to 180deg C. Rinse potatoes and dry with paper towels. Drizzle with olive oil and sprinkle generously with salt, pepper and Italian herbs. Arrange on grill over a dripping pan for fan-assisted grill so heat is distributed evenly; able to brown all sides uniformly while locking in the juices to keep them tender. Roast for about 30 minutes or until the skin is fabulously crisp.
Check out my kiddo’s homemade birthday card with a flower and greeting. Isn’t he sweet?
