We live quite close to Auckland’s best fish shop and that’s where I bought these beautiful salmon fillets. This easy yet yummy baked salmon dish is perfect if you’re considering seafood galore night with some other dishes to match like Malaysian Buttered Prawns.
Ingredients:
Fresh boneless salmon fillets
1 tbsp finely chopped ginger
1 tbsp fresh chili paste
1 tbsp lime juice
1 tbsp light soy sauce
1 tsp sugar
1 small red onion, sliced thinly
1 small carrot, sliced thinly
1/2 capsicum, sliced thinly
1 tbsp olive oil
A slice of butter, diced
Fresh salad greens
Coriander sprigs
Combine ginger, chili paste, lime juice, soy sauce and sugar in a bowl. Use this to marinate salmon fillets for at least 15 minutes.
Preheat oven to 200 deg C.
Slice onions, carrots and capsicums. Drizzle with olive oil. Place on a baking tray lined with baking paper. Arrange salmon on top of the vegetables. Drizzle with the remaining marinade and scatter diced butter on top. Bake for 20 minutes.
When cooked, combine baked vegetables with fresh salad greens on rice in a bowl. Arrange salmon on top and garnish with fresh coriander sprigs.

Lime and toyo!! Sweet!! Salmon is gold here, too, but there’s always frozen.I can always rely on when I crave for fish.
