I still consider myself a beginner baker and still in this category for the past 5 years. I know, pathetic hehe. I didn’t bake for about 3 years – the oven triggers the fire alarm in our old apartment, I didn’t get the recipe right, blah blah, the list goes on and on. Anyway, I am back and hopefully I can carry the momentum. Antonio’s muffins inspired me big time. I can bake those with my eyes close and the boys love it. So I venture on chocolate muffins.
This is based on Antonio’s successful muffin recipe. Fantabulous result! Crunchy on the outside, moist and fluffy on the inside. YUM.
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 cup sugar
- 1 tsp salt
- 1 cup chocolate chips
- 3 tbsp cocoa powder
- 1 egg
- ¾ cup milk
- ⅓ cup vegetable oil
- Preheat oven to 180 deg C.
- In a large bowl, combine flour, baking powder, salt, chocolate chips and cocoa powder.
- Beat egg in a separate bowl. Add sugar, milk and oil. Fold in this wet mixture into the other bowl. Mix no more than 10 seconds.
- Pour batter into well-greased, floured 12-muffin tray. Bake for 30 minutes.
