Homemade Mini Mushroom Burgers with Mushroom Sauce

Last week had been very busy starting with few days of massive malware-induced stress when I helped Ces to clean up her websites. Then a couple of interesting projects got my tushy stuck in my chair by the end of the week. But as always, cooking is my way of de-stressing and one day during these challenging times – in between doing viber calls, chat conversations, back-ups and updates – I cooked mushroom burgers for the boys.

Ingredients for the patties:
750g ground beef
5-6 medium-sized button mushrooms, chopped
1 medium-sized onion, chopped
2 eggs
Salt
Freshly ground pepper
3-4 tbsp Panko breadcrumbs (I ran out of ordinary breadcrumbs)
1-2 tbsp of flour

Ingredients for the sauce:
½ cup fresh button mushrooms, thinly sliced
¼ cup beef stock
½ to 1 tbsp parsley flakes (or fresh parsley)
Approx. 250ml cream (1 can)
1 tbsp lemon juice
Salt
Freshly ground pepper
½ tbsp butter

Combine beef with above ingredients and mix well.

Place an egg ring on a piece of baking paper. Scoop beef mixture into the ring to shape your patties. Place each patty on top of another in a container and store in the fridge for at least half a day before cooking.

Heat oil in a large non-stick pan. Fry burgers 4-6 over medium heat for approximately 5 minutes each side.

Clean the pan of excess burger grains. Add 1 tbsp of olive oil and heat for a few seconds. Add mushrooms and cook for about 2 minutes.

Add beef stock to deglaze and bring to boil. Lower heat and simmer for about 5 minutes.  Stir in parsley flakes.  Add cream and cook over low heat for another 5 minutes or until thick.

Season with lemon juice, salt and freshly ground pepper.  Remove from heat and transfer to a serving bowl. Stir in butter and pour over burger patties.

Very similar to how I normally make homemade patties (ground beef and onions) except with the addition of mushrooms.  And some of them, like those shown above, I cook a bit more as the boys love ‘em browned on the outside.  By the way, I made about 16 pieces of patties and 18 meatballs.

I am not a professional cook. My only claim to having a culinary background is a short stint as my dad’s teen ‘sous chef’ in his carinderia ages ago. Dad ran small eateries since I was a young kid - serving standard ‘turo-turo’ food ranging from the likes of menudo, adobo, pritong isda, dinuguan, binagoongan, bopis, munggo, pinakbet and giniling to merienda fares like goto, ginataan, pancit bihon, halu-halo and saging con yelo.

My father, a farmer in his hometown before working his way to becoming an accountant, definitely influenced my cooking in a lot of ways than I thought. My siblings and I were raised in a backyard full of fruit trees and vegetable garden. We spent weekends and the summer breaks running around with ducks, chickens, goats and pigs. I had wonderful memories of gathering eggs, butchering chickens, selling vegetables and the sweet aroma of preserved fruits. But my love for art led me to a degree in Architecture. Just few months after getting my license, I went abroad and lived independently at age 23. Definitely no maid, no cook, and a totally different food culture. Along the way I met lots of friends and spent what seemed a lifetime learning new tricks and recipes.

Now living in Auckland, I am a work-from-home mum who juggles time between work, fun and family - in pursuit of work-life balance. No matter how busy I am, I love the idea of cooking for my family. My blog chronicles home cooking greatly influenced by life outside my home country from Southeast Asia to Beijing and Auckland. And most of the time, being busy also means easy (sometimes quick), affordable meals.

  1. didn’t know Ces’ site had malware hacked into it…glad to know it’s ok now! i abandoned my other site because of the malware issue. don’t know how to remove it!
    but back to the food…i would love to try your version! i almost always have ground meat on the freezer for dishes like this! bookmarked! :)
